I really think that it is time for me to explore my other options and see what it's like to actually have a job like the one I've been offered.
There's nothing wrong with telling your boss this. It's a valid and common reason for taking another job. Tell him you've enjoyed your time there, but you feel it's an appropriate time to move on. Remember also that employers really don't expect young workers to be in a job for 5-10 years. He may not be happy to have you leave, but he is aware of the possibility.
